Before Anderson Arrives... I need your help!

Before Anderson arrives I have several SEVERAL things on my to do list. I need to get our bedroom upstairs finished so we can set up the nursery, sew a few more pillows for the nursery, enjoy 1 more baby shower, get rid of TONS of clothes Jon and I do not wear, have a yard sale with our pile in the basement, actually figure out what we still need before our little man arrives, finish our cloth diaper stash so we have enough for him, and the list goes on...

BUT, I could really use your help on one thing. I want to make ahead some meals that I can freeze and pull out after he is born! Do you have any good make ahead and freeze recipes? If so post them as a comment! We love to try new things and I am hardly ever organized enough to make ahead a meal, so my list of make ahead and freeze meals begins and ends with lasagna! Can't wait to try all your recipes!

And of course we will make meals for you for after. Shouldn't I get that together once he is actually born so we know the dates?
These meatballs are really good and freeze wonderfully:
*1 lb. ground beef
*1/2 cup KRAFT reduced fat 100% Grated Parmesan Cheese
*1/4 cup chopped fresh parsley
*1 egg
*1 clove garlic, minced
Directions
PREHEAT oven to 375°F. Mix meat, cheese, parsley, egg and garlic. Shape into 14 meatballs.
PLACE in foil-lined 15x10x1-inch baking pan.
BAKE 25 min. or until cooked through.

Any casserole dish. Like Chicken & Rice casserole, Ham tetrazinni (sp?) etc. I use tin foil pans (from $1 store) and freeze. The smaller pans come in sets of 3 and hold just enough food for 2. :)

I make this simple & healthy soup for my toddler:

Ingredients:
- 1-2 sweetcorn (cut into 4 pieces each)
- 2 carrots (cut into smaller pieces)
- 2 sticks of celery (cut)
- 1 cream onion (cut)

Steps:
- Wash, peel and cut ingredients
- Place them into a pot
- Add 3-4 bowls of water until ingredients are covered
- Boil on high heat for 15 minutes
- Continue cooking on medium heat for 45 minutes
- Pour soup into 3-4 heat & freezer-safe containers. Freeze.

We usually consume the ingredients in the same day and freeze only the soup.

I have made many meal for friends and loved ones for when the baby arives and even after. I have found that soups & chili is a good one that freezes well and heats up fast. I hope that helps! I have loved following your story and look forward to seeing pictures of your little guy. I hope that you are well! :)

that freezes very well. It's hearty but you can add ground beef if you'd like. Good luck with everything!

This is just an entree, so you'll have to figure out a couple of sides, but it is REALLY easy and very yummy!

Feta Stuffed Chicken

4 skinless boneless chicken breasts, pounded thin (I sometimes get just two and just slice them in half to make them thin instead of pounding them)
8oz.Feta Cheese
1/4 c. frozen spinach (cooked)
1/4 c. sun-dried tomatoes, chopped.
1 tsp. oregano.

Preheat oven to 350.

Mix the feta, spinach, sun-dried tomatoes and oregano in a bowl.

Place feta mixture on the chicken and roll the ends up and over. Then turn the chicken over so it's seam down.

You can bake it now for 20 minutes, or you can wrap them individually in plastic wrap and bake them for 40 minutes or until juices run clear, from frozen.
